Take a trip to West Maui’s Napili Plaza and you will discover the culinary gem that is ‘Fond’. Nestled in the well-known strip mall, this Napili eatery serves up a diverse range of delicious cuisine together with a big dose of Ohana that makes it a favorite spot for both locals and visitors to the area.
What’s in the Name?
The FONDness of serving both the community and the many island guests shines through in everything they do - from Hawaiian regional flavors to classic American fare, the specialty Sunday brunch, and the family collaboration that is ‘Beats & Eats’ - their popular monthly music and dining event.
Fond is also a culinary term and French for ‘base’ - referring to the browned bits and drippings of meat and vegetables left on the bottom of a pan. It is the most flavorful part that a cook deglazes to make a wonderful stock, sauce, or gravy. The fond gives soul and depth to a dish.
History & Vision
Following the dream he had since his days at culinary school, owner and chef Jojo Vasquez opened Fond in May of 2019. Inspired by his own diverse cultural influences and the eclectic journey he has had in the food and beverage industry over the last 20 years, his goal was to create his own neighborhood eatery and provide a ‘‘a stellar, culturally inspired and fun dining experience for the Maui community.” By combining his creative culinary flair with this warm and welcoming space where family and friends can gather to eat, drink, and spend time together, he has succeeded in achieving just that.
The eatery has an open space with various sections: the dining room, a lounge with couches, the bar, and the chef’s counter. There is plenty of open-air and patio space, and the whole place has a relaxed and friendly vibe.
Menu Highlights
Fond, Maui, is open for breakfast, lunch, and dinner, and also offers diners popular weekly specials like their FFC (Fond Fried Chicken) Wednesdays, and the ever-popular Sunday brunch.
Breakfast and brunch options include the more traditional pancakes and eggs, sandwich es, and salads - plus a variety of brunch bowls and bento boxes. Lunch offerings also include a range of classic American burgers with an accompaniment of gravy fries or loaded potato wedges.
The dinner menu is served Wednesday - Saturday from 4-9 pm and offers a range of starters like ‘Adobo Brussels Sprouts’, ‘PLT Wraps’, and ‘Poke Nachos’, entrees like the ‘Maui Cattle Sirloin and Glazed Broccoli’, ‘Korean Fried Chicken’, and ‘Fond Seafood Tsunami’, as well as some very tempting desserts like ‘Basque Cheese Cake’ or ‘Cookie Sundae’ served with Roselani Ice Cream.
Sunday Brunch
On Sundays from 10 am until 3 pm, Fond’s Sunday Brunch takes the main stage and is a must-try! The menu includes taste-bud tantalizing offerings such as Hawaiian Omelette, Fond Benedict with Canadian Bacon or Mojo Pork, their delicious Hangover Burger, and even Fish and Chips!
Entertainment
On the last Friday of each month, Chef Jojo and his DJ wife Eliza work in tandem to present Beats and Eats, a night of pop-up themed menus, chef collabs and drink specials, combined with a soulful blend of R&B, hip-hop, trap, new soul, afrobeats and electronic music. It’s a unique dining experience gaining in popularity each month.

How to Get There
Take Highway 30 North out of Lahaina . Passing Kaanapali and heading north, you will approach the Napili light. Turn Left at Napilihau Street and Fond Restaurant is another immediate left.
